When one of New Zealand’s best chefs teams up with one of the country’s most successful businessmen, it’s a combination destined for success. And that’s exactly what happened when award-winning chef Ben Bayly and jeweller Sir Michael Hill created Aosta, an intimate Italian restaurant on Arrowtown’s Buckingham Street. “I was fascinated by the synergies between NZ and Italy – the climate is varied and the food is varied,” Ben says.
“I was also inspired by this region and what I can find here. The wine and produce available is outstanding.”
The creative cuisine of Aosta is based on the cooking techniques of Northern Italy, using locally sourced ingredients. Some of the herbs featuring in the dishes are grown by children at Arrowtown Primary School – they are paid for their efforts and the money goes back to the school. It’s just one of the initiatives in which Aosta leads the restaurant industry with distinction.
“We hope to leave a big impact on the community,” Ben says. “Providing good direction for our crew is also really important – we treat them well, involve them in the areas they excel in and encourage hospitality as a career. It’s very rewarding.”
